Gianaclis caldwell
From 2005-2016 Gianaclis (gee-on-a-klees) made aged, raw-milk goat cheeses at the Caldwell’s off-grid dairy, Pholia Farm in Rogue River, Oregon. She’s the author of six books on cheese, dairy, and goat husbandry, including the award-winning Mastering Artisan Cheesemaking. In addition to teaching and consulting she judged cheese at competitions such as the American Dairy Goat Association and the American Cheese Society. She served on the American Cheese Society’s academic and regulatory committee and was a founding member of the Oregon Cheese Guild. In 2025, she published her first novel, The Binding.
